Here are some tasty ideas to fill your platters....
Mango and king prawn noodle salad
|1.||Peel the mango and slice into fine strips. Place in a bowl with the spring onions and noodles|
Cut the prawns in half diagonally and add to the bowl.
|3.||Put the coriander, mint, lime juice and zest, ginger, honey and fish sauce into a blender and blitz to a smooth puree.|
|4.||With the motor still running, slowly add the sunflower oil and sesame oil.|
|5.||Toss the salad with the dressing.|
|6.||Scatter over the sesame seeds and coriander leaves and serve.|

Pan Fried Sea Bass with Fresh Beetroot Salsa
Put the diced cooked beetroot into a bowl. Add the chopped spring onions, seeded and chopped red chilli, chopped fresh mint, lemon juice and olive oil. Season and stir well.
|2.||Dust the fillets of unskinned firm white fish with a little plain flour. Melt the butter in a large pan with the olive oil. Fry the fish fillets on each side for 3-4 minutes until just tender. Serve with the beetroot salsa.|
4 small diced cooked beetroot
8 chopped spring onions
1 seeded and chopped red chilli
2 tbsp chopped fresh mint
2 tbsp lemon juice
5 tbsp olive oil
4 fillets of unskinned Sea Bass
a little plain flour
