Seared Fillet of Salmon with a Tarragon Cream
The dish is very easy to make, even for the most non-confident of cooks. It tastes great and is also a great dish to cook for friends and family. This recipe is a meal for one; just multiply the ingredients to suit.
It is a very simple dish to make and only takes around 20 minutes to cook. The ingredients are easily obtainable and you can serve this dish with your favourite potatoes and vegetables of your choice.
Ingredients
6oz fillet of salmon
1 glass of white wine
¼ pint of fish or chicken stock
1 small onion diced
pint of double cream
2 sprigs of tarragon, chopped
salt and pepper
Method
Season fillet of salmon and place in a hot frying pan with a little oil, fry for two minutes until salmon comes away from the pan. Turn over and place in oven preheated to 200°C for 8 minutes.
In another pan gently sweat the onions in a little butter and in that pan add the stock, wine, tarragon, salt, pepper and reduce until only a tablespoon of liquid remains, then add cream and heat until it thickens. Then serve.
