Here are some tasty ideas to fill your platters....

Mango and king prawn noodle salad
| 1. | Peel the mango and slice into fine strips. Place in a bowl with the spring onions and noodles |
| 2. | Cut the prawns in half diagonally and add to the bowl. |
| 3. | Put the coriander, mint, lime juice and zest, ginger, honey and fish sauce into a blender and blitz to a smooth puree. |
| 4. | With the motor still running, slowly add the sunflower oil and sesame oil. |
| 5. | Toss the salad with the dressing. |
| 6. | Scatter over the sesame seeds and coriander leaves and serve. |

Pan Fried Sea Bass with Fresh Beetroot Salsa
| 1. | Put the diced cooked beetroot into a bowl. Add the chopped spring onions, seeded and chopped red chilli, chopped fresh mint, lemon juice and olive oil. Season and stir well. |
| 2. | Dust the fillets of unskinned firm white fish with a little plain flour. Melt the butter in a large pan with the olive oil. Fry the fish fillets on each side for 3-4 minutes until just tender. Serve with the beetroot salsa. |

4 small diced cooked beetroot 8 chopped spring onions 1 seeded and chopped red chilli 2 tbsp chopped fresh mint 2 tbsp lemon juice 5 tbsp olive oil 4 fillets of unskinned Sea Bass a little plain flour 25g butter
