Here are some tasty ideas to fill your platters....

 

King Prawn Salad

Mango and king prawn noodle salad


1. Peel the mango and slice into fine strips. Place in a bowl with the spring onions and noodles
2.

Cut the prawns in half diagonally and add to the bowl.

3. Put the coriander, mint, lime juice and zest, ginger, honey and fish sauce into a blender and blitz to a smooth puree.
4. With the motor still running, slowly add the sunflower oil and sesame oil.
5. Toss the salad with the dressing.
6. Scatter over the sesame seeds and coriander leaves and serve.


Ingredients:

For the salad

  • 2 Mango
  • 4 Spring onions, diagonally sliced
  • 450g cooked thin Rice noodles
  • 300 g cooked king Prawns

For the dressing

  • handful Coriander
  • handful Mint
  • 2 limes, juice and zest
  • 2 tsp grated Ginger
  • 1 tbsp clear Honey
  • 1 tbsp Fish Sauce
  • 5 tbsp sunflower oil
  • 1 tbsp toasted Sesame oil

To serve

  • 2 tbsp toasted Sesame seeds
  • handful coriander leaves

 

 

 Pan Fried Sea Bass with Fresh Beetroot Salsa

Pan fried sea bass with Beetroot

1.

Put the diced cooked beetroot into a bowl. Add the chopped spring onions, seeded and chopped red chilli, chopped fresh mint, lemon juice and olive oil. Season and stir well.

2. Dust the fillets of unskinned firm white fish with a little plain flour. Melt the butter in a large pan with the olive oil. Fry the fish fillets on each side for 3-4 minutes until just tender. Serve with the beetroot salsa.


Ingredients:

4 small diced cooked beetroot

8 chopped spring onions

1 seeded and chopped red chilli

2 tbsp chopped fresh mint

2 tbsp lemon juice

5 tbsp olive oil

4 fillets of unskinned Sea Bass

a little plain flour

25g butter
